Stanley Wilfong: Balancing a Passion for Music and a Career in Nutrition

Stanley Wilfong, the undergraduate program director of nutrition sciences, has seamlessly blended his love for music with his professional life. Unlike many who lose touch with their childhood passions as they grow older, Wilfong has maintained his enthusiasm for both music and nutrition throughout his career.

Wilfong’s journey began in sixth grade when his school’s orchestra director noticed his large hands and suggested he try playing the upright bass. “It was almost a natural fit for me,” Wilfong recalled. “Being one of the biggest kids in my class, it just came naturally.”

Later, Wilfong’s musical interests expanded to the guitar after a friend taught him a few chords. He then joined a rock band in high school, playing the bass guitar. As he was primarily self-taught, he started his music journey by leading youth ministry and learning worship songs.

The rise of the internet, which came after Wilfong’s college years, provided him with new resources, such as guitar chords and cover sheets, which further fueled his passion. He also drew inspiration from the music his parents played on an 8-track tape, a format that drove his interest in secular music.

“We bought a brand-new Oldsmobile with an 8-track tape player, and we listened to that tape repeatedly,” Wilfong said. “Some of the songs I play today were on that tape. That’s what got me interested in secular music.”

Despite his lifelong love for music, Wilfong is equally passionate about nutrition. He humorously expressed his dedication to his field, saying he hopes to “die during a lecture.” He believes in going out while doing something he loves and often shares this sentiment with his students. “I want to be in front of a class lecturing, discussing topics like Dr. Oz and his nutrition theories,” he said.

Wilfong’s personal struggle with weight, having once weighed 300 pounds, led him to develop a keen interest in nutrition. Initially majoring in computer science, he switched to nutrition in his senior year after realizing his passion for the field. Despite his professional focus, he continues to perform music regularly, playing gigs at Segovia Wine Bar every Wednesday night.

Segovia Wine Bar, located downtown off Sixth Street near Magnolia, is owned by Armando Fajardo, Wilfong’s long-time friend and music partner. The two met through a mutual friend and quickly bonded over their shared love of music. Fajardo, who is both a business owner and a former touring musician, values Wilfong’s contributions to his venue.

“It’s hard to express what it means to have Stanley perform here,” Fajardo said. “His presence contributes greatly to the success of Segovia Wine Bar. It helps us offer more to Waco than just tacos and barbecue, enriching the local cultural scene.”

Wilfong’s ability to integrate his passions for music and nutrition exemplifies a unique approach to career fulfillment and personal satisfaction.
